The addition of club soda (which is unsweetened) gives the spritzer lots of bubbles and fizz yet keeps it from becoming too sweet or strong. Endless ways to vary it: Simply choose different types of wine or another mixer to change the flavor profile of the cocktail. Make the ice cubes with fruit you love or happen to have in the fridge.

Ingredients You’ll Need

White Wine: Choose a white wine that you enjoy drinking. Keep reading for more about which wine to choose. You’ll need 3 oz. of wine per cocktail. A 750 ml bottle of wine is 25 fluid ounces. Club Soda: This unsweetened mixer adds bubbles and fizz but no calories. You may know it as seltzer, carbonated water, or sparkling water. Strawberries, Blueberries, Raspberries: A knockout trio of berries which creates the prettiest ice cubes you’ve ever seen! Feel free to eat the berries once the ice cube melts.

How to make it

You’ll want to make the fruit ice cubes at least four hours in advance so they have enough time to freeze solidly. They can be made up to a month ahead. Rinse the berries well. Large strawberries should be halved or quartered, or even diced. Divide the berries evenly in the ice cube trays. Each compartment should be full of berries. Top each cube with water and carefully transfer the tray to your freezer. Freeze until firm. Remember to put the white wine and club soda in the refrigerator well ahead of time to chill. When you’re ready to serve the cocktails, arrange two to three ice cubes in each glass. How many cubes actually depends on the size of the cubes and the size of the glasses you’re using, and your personal preference. Pour 3 ounces of chilled white wine over the cubes. Tips For The Best Wine Spritzer

Choose the right wine. This is a relatively simple recipe and the taste of the wine you use will not be altered much so it’s important to use a wine you enjoy. That doesn’t mean it has to be expensive wine but it should have qualities you love. Most commonly you will find white wine spritzers are made with Riesling, Pinot Grigio, or Sauvignon Blanc. If you prefer a rosé, try my rosé spritzer. The wine and the club soda should be well chilled. The best tip is to be sure both your wine and club soda (or alternative) are chilled in advance. Serving this cocktail cold will keep those fresh fruit ice cubes from melting too quickly.

Change It Up

Try different fruit combinations. Berries are pretty with white wine but other good choices are peaches, blackberries, watermelon, or cantaloupe. Use firm fruit that’s in season and you really can’t go wrong. Try different mixers. Club soda (seltzer, sparkling water, carbonated water) keeps your cocktail lower in calories and sugar and balances well with a sweeter wine. Tonic water is sweetened, which adds more calories and sugar, but it balances well with drier wines. You can also add fizz with Sprite, lemon-lime soda, or ginger ale but your wine cocktail will have a different flavor profile. Kick it up a notch. Use a spiked seltzer as a mixer instead of club soda. Choose flavors that pair well with the wine and fruit you choose.

Make Ahead Ideas & Storage

To save time and money (you won’t have to buy 3 kinds of fruit every time you want to make the spritzer), make more than one tray of fruit ice cubes. Pop the fruit ice cubes out of the trays once they’re frozen and store them in a freezer safe bag. The fruit cubes will keep in the freezer for up to a month and still maintain freshness.
