White Chocolate Mummies

Are we all set for some trick or treating? I am back with a sweet recipe again after two Diwali delicacies. But this time, it is for Halloween.  This weekend is a happening weekend with Diwali potlucks and Halloween parties. This is a perfect Halloween party recipe which is super simple to prepare with some readily available ingredients – White Chocolate Mummies with Cereal and Peanut Butter Filling. So as the name suggests it’s a combo of white chocolate, your favorite breakfast cereal, and peanut butter. How can it go wrong huh?  Now you got to tell me if it’s spooky or goofy? I usually stay in my comfort aka safe zone and prepare cookies for Halloween parties. This time I want to step up and try something different. The Easter chocolate eggs definitely boosted my confidence with handling chocolates so thought of trying something with chocolates again for Halloween.

Cereals & Peanut Butter Filling

Of course, Pinterest has zillion ideas and as we love white chocolates, I opted for this recipe. I wanted the filling to be crunchy and rich. What’s better than the readily available breakfast cereal and Peanut butter? I used the honey bunch of oats cereal that we regularly use and unsweetened peanut butter for the filling and used Ghirardelli white chocolate chips for the coating. The fun part was, pouring the melted chocolate over the coated white chocolate to create the mummy bandages. I and Vaandu had so much fun doing that. Also, I didn’t have black icing or to say any icing but I had food colors so used a tiny drop of black food color and mixed it with yogurt for the eyes. And don’t worry about the shapes because, hey it’s Halloween and you can design it in your own way and make it goofy as well as spooky.  I took a small batch to work and within no time all were gone and I have got requests to prepare more on the Halloween day. The process is simple but the setting time makes the procedure to look long. But it’s a fun recipe to try as a family and a recipe where you can unleash your creativity.

White Chocolate Mummies with Cereals & Peanut Butter Filling Recipe

Ingredients:

For the filling:

Cereal of your choice (I used Honey Bunch of Oats with almonds) – 1 cup Unsweetened Peanut Butter – 2 tbsps

For outer covering:

White chocolate minis – ⅔ cup Oil for spraying if using a plate for resting the chocolates.

For the eyes:

Either black icing or Black food color – a drop or beetroot juice or kesari powder. (Its Halloween and eyes can any color) Yogurt – 1 tbsp

Steps:

Preparing the filling:

Dry grind the cereal and make into fine powder.

Now mix the peanut butter with this cereal powder and incorporate them well. Make small lemon sized balls or ladoos. (This cereal ladoo by itself was tasting awesome ;-) )

Refrigerate it for 30 minutes.

Preparing the Cover:

I usually melt the chocolate using the double boiler method. I went with the regular double boiler method. You can also melt them in the microwave. So basically I boiled water in a vessel and cover it with a plate. In another bowl, I added the white chocolate and kept it on top.

The chocolate will slowly start to melt and keep stirring it and keep it in the boiler till you can remove the filling from the fridge.

Assembling:

After 30 minutes, remove the fillings from the fridge. Now slowly dip the filling one by one in the melted white chocolate. Also, make sure the white chocolate is coated nicely. Remove them and keep it in a parchment paper. If you are using a plate, just grease them with oil so that it can be removed easily.

Now refrigerate this again for 45 minutes or until the chocolate is set.

Adding the mummy bandages:

Once the chocolate is set, remove from the fridge and let it come to room temperature. Meanwhile melt the white chocolate again if it is set. Now using a fork or spoon slow drizzle the melted white chocolate as a bandage around the white chocolate cereal. And after drizzling on all white chocolate, refrigerate them again for 20 minutes.

Adding the eyes:

You can use any black icing or any colored icing or frosting. In fact, if you don’t have in handy, just mix your favorite food color. After the chocolate is set, using a toothpick place a small amount in the chocolate mummies as eyes. You can even draw mouth and the sky is the limit.

Let it sit for ten minutes and that’s it. Yummy White Chocolate Mummies with Cereals and Peanut Butter Filling is ready.

Notes:

Letting the ingredients set is very important. We do not want the filling to break while covering it with white chocolates. Also if you feel you have added more peanut butter, you can freeze for 30 minutes instead of refrigerating them. I didn’t add any additional sugar, but if preferred sugar can be added too. Also, as I mentioned, beetroot juice or kesari powder, spinach juice any natural flavors or artificial can be added for the eyes. Last but not least, have fun and make it goofy or spooky. :-)
