My theme for this week’s blogging marathon is ‘Kid friendly Easter treats’. I’m hosting Valli’s Kid’s Delight event this month with that theme, so for the next 3 days I’ll be posting some interesting dishes that kids would enjoy for Easter. First up is a Chocolate French Toast that happens to be 100% vegan. My kids love pancakes, waffles and French toast for weekend breakfast. I keep looking for new recipes to try for them. I saw the recipe for vegan banana French Toast on Martha Stewart website which looks amazing. But I wanted to give a chocolate twist to the recipe because I was making them for the Easter treats theme. In my mind chocolate and Easter are somehow connected – maybe it’s the chocolate eggs or something. This vegan Chocolate French toast is made with tofu and banana. Tofu gives the necessary protein that egg would have provided in the traditional recipe. But tofu doesn’t firm up as much as an egg, so this French toast is slightly softer than the traditional egg version. But there is no tell tale sign of tofu anywhere in this dish.I served this to my husband without telling him that this was made with tofu and he couldn’t even tell the difference. I froze the leftovers wrapped in foil and reheated them in the microwave.
