The spinach and feta cheese filling was so good that I couldn’t stop eating tasting it right from the pan. Fresh dill adds a nice flavor to the filling. These are best when eaten hot or warm. Unbaked spanakopitas can be frozen for up to 2 months (place them in a single layer on a plate or baking sheet, freeze until solid. Then transfer into a ziploc bag and store in the freezer). Bake frozen ones a little longer.
