About these grilled potatoes
Grills aren’t just for meat: The goal for a grilled meal is to not have to do any actual cooking inside, right? So often, Ben is outside manning the grill and I’m inside making a few sides to go with dinner. Try making your sides on the grill too, starting with these potatoes. Flavorful: I wanted these potatoes to have a kind of barbecue feel. The spice mixture contains paprika, chili powder, onion powder, garlic powder, and of course, salt and pepper. The spice mixture is perfect for the blank canvas of the potato. Just the right amount of spice, but not overpowering, or leaving your mouth on fire. If you like a little more spice, add some cayenne to the mixture. Easy: I keep it super simple because I didn’t want you to have to run out and get any crazy strange spices. You probably have all the ingredients in your pantry already. Ready for Toppings: Sour cream and chives are optional but highly recommended. You could also top with barbecue sauce, chimichurri, or ranch dressing.
