Ragi Sattu Ladoo Recipe

Ghee: can use regular ghee or coconut oil Nuts: almonds, pecans, raisins, foxnuts (makhana) – use any nuts of choice Seeds: pumpkin seeds, flax seeds, chia seeds, sesame seeds- use any seeds of choice Ginger Powder: optional Sweetener: use any sweetener of choice like sugar/ jaggery/ monk fruit, etc

 

How to Make Ragi Sattu Ladoo

Let’s get started with our ladoo’s now:

Step 1: Roast the Ragi Flour

In a large, dry pan, roast the ragi flour on medium heat for 5-7 minutes. Stir constantly to ensure even roasting. You’ll know it’s done when the flour starts to release a nutty aroma and turns slightly darker in color. Transfer the roasted ragi flour to a plate and let it cool.

  Step 2: Roast the Sattu Flour

In the same pan, roast the sattu flour for about 4-5 minutes until it becomes slightly aromatic. Be careful not to burn it. Once done, set it aside to cool.

  Step 3: Prepare the Mixture

In a large mixing bowl, combine the roasted ragi flour, sattu flour and mix well. Add ginger powder and mix again.

  Step 4: Add the Roasted Nuts & Seeds Mix:

In the same pan, roast the nuts first and keep aside. Then roast the seeds and keep in the same plate as the nuts. Cool them and then slightly crush them using a chopper or mixie. Add the chopped nuts & seeds mix in the roasted flour and mix everything evenly.

 

Step 5: Sweeten with Jaggery

Add the sweetener of choice and mix everything evenly. Add the sweetener when the flour is cooled down to prevent sweetener from melting.

  Step 6: Add Ghee or Coconut Oil

Heat ghee or coconut oil in a small pan and pour it into the flour mixture. Mix well using a spoon or your hands until the mixture starts to come together. The heat from the ghee will help bind the ingredients.

 

Step 7: Shape the Ladoos

Once the mixture is warm enough to handle, take a small portion and roll them into round ladoos. If the mixture is too dry to hold together, add a little more warm ghee or coconut oil. Garnish the ladoos with chopped dry fruits.

  Step 8: Let the Ladoos Set

Place the ladoos on a plate and let them cool for about 30 minutes to firm up. Store the ladoos in an airtight container for up to two weeks or in the fridge for more.
