After aloo paratha and cheese paratha thali, here am I with yet another delicious and filling paneer paratha spread or thali. I made these paratha platters during the peak shelter in place, and I had to plan meticulously to carefully use my groceries. Right from side salads to drinks and even the extra cucumbers and onions, I had to plan and use it. Even though it is a simple platter, it turned out to be a delicious one, and I purposefully made extra paratha filling to make sandwiches for dinner. This pandemic posed a lot of challenges, but no, I am not going to complain. That’s one thing the pandemic has taught me – not to complain. Ok, let me stick to the paratha topic and not deviate. :-) So this is how I came up with this paratha spread.
Paneer paratha spread-
We love our paratha with simple pickle and raita, and that’s what I have it here on the plate. And I used my sweet and spicy lemon pickle for this paratha as well. We love that pickle, and I made that again as well. I had some greens and microgreens. So I mixed them with some fruits and honey and made a simple salad. Guess what; it’s a very light salad without any oil. Combining arugula and other greens with fruits worked well. My in-laws bought in some nannari sarbath and made a quick nannari sarbath to go with it.
