Mixed Berry Froyo

I know I am on vacation and should take a break, but the blogging marathon themes this month were exciting, so I couldn’t let go off. It’s frozen delight for kids. I picked super simple recipes that I usually prepare for vaandu.  I was able to prepare these during the first two weeks of his summer break and quickly scheduled them. Coming back to this recipe now, last month, when I tried banana froyo (posted at IMC) kiddo enjoyed it very much I wanted to try other fruit flavors too. Basically, for Froyo, you need frozen fruit and yogurt. That’s it. Just blend those two and freeze for 30 to 60 minutes or up until scoopable consistency and you are ready to go. For banana froyo, I froze fresh ripe bananas for 24 hours. But for this, I had frozen mixed berries. I mentioned about these frozen berries earlier in this post. I always have frozen berries in stock to whip up some smoothies or for our oats and parfaits. That came in handy for this recipe.

All you have to do is blend, 2 cups of mixed berries and one cup of yogurt and freeze. Didn’t I say, I picked super simple recipes this time? I did not add any sugar, but we did sprinkle some colored sugar while relishing. But depending on the fruit, you can add sugar if required. Tip: Do not throw any of the overripe fruits. Just chop them and put in Ziploc and freeze. Whenever you are planning to prepare this froyo just blend the frozen fruits with yogurt.

Mixed Berry Froyo Recipe

Ingredients:

Mixed Berry – 2 cups (Mix of blueberries, blackberries, raspberries, and strawberries) Yogurt – 1 cup (I used Greek yogurt) Water – 2 to 3 tbsps Toppings as per your preference. I used sprinkles and confetti.

Prep – Work:

Let the frozen fruits stay out for at least 15 minutes. It helps in faster blending. But do not thaw them.

Steps: 

Blend the yogurt and the frozen berries in a mixer jar. If required add 2 to 3 tbsps of water. But not more than that. Transfer it to a freezer safe container and freeze for 30 minutes. As we are using frozen fruits, 30 minutes of freezing will give a scoopable consistency. But you can always freeze for a longer time. After 30 minutes, scoop out required quantity and add your favorite toppings and enjoy. Freeze the rest.

Notes:

I would recommend chilled or frozen fruit for this recipe. As I mentioned in the tip above, do not throw the overripe fruits. You can freeze them and always use it for this recipe. Also, you can use a single fruit like only raspberry or strawberry or mango. You can chop them and put them a Ziploc and freeze it. Depending on the fruit sweetness/sourness, add required sugar. If you are planning to freeze for a longer time, then wrap with aluminum foil or cling wrap to avoid the ice crystals.

Toppings: The sky is the limit for adding the toppings. For my banana froyo I added chocolate chips and for this one went with confetti. You can even add fresh fruits, marshmallows, fruits gummies, and tutti frutti like they do in froyo shops.
