The weekend or the Sunday special biryani thali begins this week. Last week, I shared ingredient-based platters like quinoa platter, poha platter, ragi platter, oats platter, zucchini platter, and completed the series with a breakfast toast platter. And this week, it’s all about simple pulao and biryani platters. Back in India, biryani was a rare fare at our home. It’s like a special treat, and mom always makes her simple veg biryani with coconut and fried bread. But weekends, we do have our unique combos like mor kuzhambu and kaara curry or sambar and potato curry or vathal kuzhambu and usili.  After coming to the US, I started exploring and learning different Indian cuisines and other international cuisines. The weekend is when I treat my family with some exotic and simple dishes. And biryani is one among them, especially when friends are coming over, I resort to biryanis. I don’t have any set weekend rituals. Some weekends, I prepare an elaborate brunch with parathas. Sometimes, I make extravagant tiffin thali with idli, dosa, pongal, and sambar or biryani and gravies. Let me be honest here, we do eat one meal out during the weekends. 

Biryani Gravy-

Coming to the biryani platters, I love my biryani with plain onion raita and some simple gravy. I love the biryani salna they give here in the restaurants, and I started following the same concept. I don’t make the same gravy every time, but love making assorted salna, kurma, and other gravies.  There is one more reason too. You can make some rotis and use the same gravy as a side dish. And that makes it an elaborate lunch – roti, rice, curry/gravy, biryani, and sweet. This menu is perfect when you have your friends coming over or for small potlucks and get others.  PS– When I make biryani and gravy for lunch just for us, the dinner would be roti with the biryani gravy. See no leftovers and win-win.  Coming to the dessert, most of the time, I manage with icecream or simple microwave desserts. Sometimes I skip the dessert. As much as I love to cook, I like to relax during the weekend, so I take some shortcuts.
