I am back with another quick and easy tomato recipe after the roasted tomatoes. 

Pachadi varieties

Yogurt-based relish, or pachadi (as we say in Tamil) and sweet pachadi, are part of the festive and wedding menus. This sweet tomato pachadi is quite common on the wedding menu. But this microwave version of mine is very simple, and it’s a quick sweet pachadi recipe that you can make in less than 15 minutes. For the traditional sweet pachadi, we slow cook the tomatoes and sugar and add some flavorings and nuts roasted in ghee. But for this version, I just used two ingredients – tomatoes and sugar – no other flavorings or nuts or ghee. It’s a vegan, nut-free, and gluten-free recipe.  I have quite a few pachadi recipes on my blog. Do check it out under my pachadi category. 

Rice accompaniment

My husband likes this sweet pachadi very much, and when I can’t make kootu or poriyal, this is my go-to dish. He loves this with sambar or rasam or even with yogurt rice. Yes, it’s a great rice accompaniment too. Refer notes on how to make it like a spread or jam.  Usually, for Tamil New year and Ugadi, we prepare mango pachadi. When I can’t source mangoes during Ugadi, I end up making this sweet tomato pachadi. Also, when time is pressing, it’s easy to make this microwave version of the pachadi.  

Ingredients

Tomatoes – I used two big tomatoes, approx 280 grams. I used the Roma variety. I have tried this recipe with heirloom as well as cherry tomatoes. Use ripe to very-ripe tomatoes. If the tomatoes are sour, adjust the sugar accordingly. Sugar – I used two heaped tbsps of sugar, approx 34 grams. Adjust to your taste. You can also use jaggery, but I have always used sugar. I haven’t tested the recipe with jaggery. 

Dietary specifications and serving suggestions

As I mentioned before, it’s a vegan, gluten-free, and nut-free dish. We love this with our rice dishes. If you make it like a spread or jam, you can serve it with bread also. I always make the required amount for the day or even that particular meal as we can make this pachadi in less than 15 minutes.

How to make thakkali sweet pachadi

In a microwave-safe bowl, add the finely chopped tomatoes and microwave them for 1 minute.Take it out and mash it and add sugar and mix well.Again microwave for 2 to 3 minutes and mix well. Make sure to stir for every one minute. You need to microwave till the tomatoes are soft and mushy. I microwaved it for a total of 3 minutes and 30 seconds. 

Recipe Notes

Depending upon the microwave, the time may vary. As I mentioned, you have to microwave till the tomatoes blends together and become soft and mushy. Make sure you stir for every 1 minute. You can cook for some more time until 90% of the water is absorbed and then use it as a spread or jam. In that case, you can add cardamom powder or a bit of vanilla essence for added flavor.
