Last year I combined mango with couple other fruits and posted the breakfast smoothie recipe – mango, lychee and pineapple smoothie with chia seeds. But this time I just wanted to use mango and prepare this simple and yummy pudding recipe. As I posted vegan recipe yesterday, I thought of going non-vegan today. I used regular 2% milk for this recipe but that can be replaced with soy milk or almond milk or coconut milk to make this pudding vegan. To add more flavor and to give a twist to this recipe, I added cardamom powder. But that’s completely optional and when I prepare this as breakfast I usually skip the cardamom powder. This Chia Seed Pudding is also a “make-ahead” dessert and a perfect summer dessert as it is served cold. Sorry for repeating again but.. Its a super simple recipe or I should say a six ingredient fix. All you need is milk, mango puree, sugar, chia seeds, water and cardamom powder. The Chia seeds forms the gel and acts a binding/thickening agent.
Chia Seeds
Its a known fact that chia seeds are rich in omega-3 fatty acids . As the seeds are hydrophilic, it absorbs upto 12 times their weight in liquid when soaked and because of this nature they help our diet by making feel full. Mango Chia Seed Pudding
Ingredients:
Chia Seeds – 2 tbsps Water – ½ cup Mango – 1 (Approx 1.5 cups of mango pulp) Milk – 1 cup Sugar – 3 tbsps Cardamom Powder – ¾ tsp.
Prep work:
Soak the Chia seeds in ½ cup of water for at least 30 minutes. When soaked in water, chia seeds become double the size. As I used pasteurized milk, I didn’t boil. I added the milk directly. But if you are using un-pasteurized milk, boil the milk and make sure it is cooled down to room temperature. Wash and peel the mango skin. Chop the pulp roughly into small pieces.
Steps:
Prepare the mango puree by blending the mango pulp with 1 cup of milk, 3 tbsps of water and the cardamom powder.
To this mix, add the soaked chia seeds and mix well.
Check for sugar and if required add more.
That’s it. Pour this Chia Seed Pudding in your favorite ramekins or cups and serve chilled.
Notes:
Milk can be replaced with almond milk or soy milk or coconut milk or cashew milk to make it vegan. Adjust the sugar according to the sweetness of mango. Instead of sugar, you can add condensed milk which makes the pudding creamy and rich.
