I’m sure it’s no secret by this point that I’m a major fan of salads that keep at least 3 to 4 days in the fridge. I love prepping hearty salads on the weekends (or whenever I get a chance) and then I have no excuse when it comes to lunch time. They have a somewhat peppery, earthy flavor that works well in this salad.
