Kara Boondi Mixture

The Diwali spree begins a little early at VVK, and I am starting with this savory Diwali snack mixture recipe because homemade snacks are the best! Check out the detailed video recipe, and why I think it is an easy-peasy recipe. We all like crunchy snacks with our tea and coffee and this kara boondi mixture is a perfect match for that tea/coffee time. I love kara boondi (updated the post with new pictures and video), and I make it often even when there isn’t any occasion. We relish it with tea/coffee and I love to sprinkle some boondis on top my bisibelebath and love to make raita with it too. :-) When I tried Kara Boondi this time, I decided to make the mixture also. A mixture is nothing but a combination/mix of snacks. And that mix of snacks can be anything like boondi, omapodi, kara sev, murukku, fried peanuts, fried, flattened rice, fried roasted gram dal and other fried nuts like cashews, almonds and what not?

What to Include into the Mixture?

You can mix and match with what you have in hand or with what you prepare. So this time I went with kara boondi mixture where I added more kara boondi and did not add any omapodi, murukku or sev. But I did include fried nuts and other goodies. Now you know why I call this easy peasy. It is not mandatory to press any muruku or Karasev or omapodi but even without that you can make crunchiest and delicious mixture.

How Did I Make My Mixture?

I first made kara boondi and then fried peanuts, curry leaves, roasted gram dal followed by flattened rice and cashews. I drained all these goodies on a tissue paper to remove excess oil and mixed them all. As I included red chili powder and salt on my kara boondi mix, I did not include any for this mixture. But you can include more as per your taste preference. That’s it. Sounds easy right?

Easy Kara Boondi Mixture Recipe

Ingredients:

Kara Boondi – 3 heaped cups approx Aval – ¼ cup Pottukadalai | Roasted gram Dal – ¼ cup Cashews – 2 tbsps of cashews Salt – ¼ to ½ tsp or as required Red Chili Powder – ¼ to ½ tsp or as needed Oil for frying

Prep-Work:

Make the kara boondi, and you can find the recipe here.

Steps:

I fried all the items right after making my boondi. But if you had made kara boondi well ahead, then heat the oil for frying the other ingredients. Fry the roasted gram dal over medium heat until it turns light brown. Remove them from oil and keep it on a tissue paper. Then reduce the heat to low and add the flattened rice and cashews and immediately turn off the heat. Remove them from oil and drain the excess oil. Allow them to cool for a couple of minutes. Now in a mixing bowl, add the kara boondi, fried roasted gram, flattened rice and cashews. Toss them together. If required add salt and red chili powder, not more than ½ a tsp. That’s it mixture is ready.

Notes:

Do not fry aval over medium or high heat. Fry it as the last ingredient and after adding turn off the heat immediately. You can include almonds and other nuts as well. There is no set measure for the ingredients, and you can adjust according to your preference.
