Potato is unanimously ‘the favorite vegetable’ of everyone in my family. Which means I buy pounds and pounds of potatoes every month. So when I saw this months theme of ‘1 vegetable - 3 countries’, I knew I have to make the most of my potatoes. First up is this Italian fried potatoes recipe that is extremely easy to make and oh-so delicious. I don’t think there is any country where potatoes are not used. I have quite a few potato recipes posted on my blog. But my all time favorite is this simple South Indian style fried potato curry that my mom makes. Next up are these Mexican home fries made in a cast iron skillet.
Italian Fried Potatoes:
So this week, I will be posting 3 potato dishes from around the world. My first recipe is this Italian fried potato recipe that cannot be simpler to make. No special ingredients are required to make this dish. All you need is potatoes, peppers and onions.
Ingredients in Italian Style Potatoes:
Traditional Italian recipes focus on fresh ingredients and use very little sauces/ spices etc. Which is the opposite of the heavily sauced dishes we get here in the US. So you may not find this dish in any of the Italian restaurants, but you can easily make it at home. Garlic gives the dish nice flavor and aroma. I probably let the veggies fry up a little too much but I like caramelized onions and the browned/ roasted edges of potatoes and peppers. Finally a generous sprinkle of fresh parsley rounds up the dish.
Great Side dish:
These simple fried potatoes are great to serve as side dish for any meal. The South Indian in me would serve them with steamed rice and a dal. But they are colorful and tasty enough to serve for any Holiday buffets/ dinners as well. This can be a delicious alternate to traditional mashed potatoes. Best thing about these fried potatoes is that they can be served warm or at room temperature. Leftovers can be refrigerated in an airtight container for up to 3 days. They can be warmed in the microwave just before serving. This makes them perfect to carry in lunchbox. Let’s check out what my fellow marathoners have cooked today for BM# 106.
