Quick Easy Indian Chickpea Salad
One of my most favorite go-to salad all season long is this ‘Indian Chickpea Salad’, also called ‘Chole Salad’ (in Indian language). A great mix of fresh ingredients, boiled chickpeas with nuts/cheese, and some chat masala (a lemony-spicy blend of spices – available in every Indian store). It’s packed with flavors, filled with nutrients, and works as a light meal or easy to pair with any kind of food.
Ingredients for the Indian Chickpea Salad:
Here are the simple ingredients that can be found in any Indian or your local grocery stores: Boiled Chickpeas – nicely washed and drained Onions – I’m using red onions but any other onions would be fine too Tomatoes – I’m using cherry tomatoes, but use any fresh tomato Cucumber Pomegranate – fresh or packed pomegranate arils are best here. Mixed Nuts – use as per choice or omit this ingredient Feta Cheese – use any light crumbly cheese Chat Masala – or any spicy lemon mix Fresh Cilantro Lime or Lemon
How to Make Chole Salad:
The recipe cannot be easier than this, just add everything in a huge bowl and mix. Check for seasoning and enjoy.
Above is an idea of packing the salad for a party or work lunch.
I’m mixing some of my favorite nuts like walnuts, almonds, cranberries in it, but you can add or remove this ingredient as per your choice. I’ve added Feta Cheese to it but you can add any light crumbly cheese or skip this ingredient if you want a vegan salad.
Important Tip:
One thing to remember with any salad is that if you mix seasoning + salt in it, after few minutes it will become soggy or watery. Hence, I always add salt to salad just before serving or keep it in a separate box if packing it for lunch/picnics.
