I researched a lot for this theme of ABC baking from around the world. I am not exaggerating, but I spent more time in researching the recipes than cooking. These are the criteria’s that I had in mind,
First of all, I have to pick recipes in alphabetical order, and I cannot choose a recipe from the same country twice. I need to pick easy recipes also. (Not so complex ones as I am not a pro when it comes baking) The recipes that my family will love.
Noone Knows the Origin
The recipe research was indeed a daunting task. The first bread recipes that I came across was this ice cream bread and guess what; no one knows the origin of this bread. :-) Apparently, someone posted the recipe they tried from the Southern Living magazine in food.com. I saw a lot of recipes similar, but no one knew the origin. So I am going to go ahead and post this under “United States” and please feel free to correct me if I am wrong. :-) The first recipe that I tried for this marathon is also this recipe. I might have baked this more than five times by now with all different ice cream flavors, with and without tutti frutti and with and without confetti. This bread reminded me of the wonder cake that we used to have in India. For this recipe, I used vanilla flavored ice cream and some colored confetti/sprinkles. But that’s entirely optional.
As mentioned in my biscuit post, self-rising flour is a combination of all-purpose flour, baking powder, and salt. You can prepare it by combining of 1 cup of all-purpose flour and 1.5 teaspoons baking powder and ¼ teaspoon fine salt. Recap before this Ice Cream Bread recipe:

Ice Cream Bread | A Two Ingredient Bread
Ingredients:
Ice cream – 2 cups (softened) / 1 pint Self – rising flour – 1.5 cups Colored Sugar Confetti/sprinkles – 2 tbsps.
Prep – Work:
If you ice cream is not soft, microwave it for 20 to 30 seconds.
Steps:
Preheat your oven to 350 deg F.
Combine the melted ice cream and self-rising flour. I used my hand mixer to blend them. You can mix using hand whisk too. Make sure you remove all the air pockets and mix until well combined. At this stage add the sugar confetti or other toppings and fold in.
Spray the loaf pan with cooking spray and pour the batter evenly.
Bake for 35 to 40 minutes or until a toothpick when inserted comes out clean. Let it cool before slicing.
That’s it yummy ice cream bread is ready.
Notes:
You can use any flavored ice cream, but try to avoid the non-fat ones. You use any toppings like tutti frutti, sprinkles or even chocolate chips. Insert a toothpick after 30 minutes and bake 5 or 10 minutes more accordingly. If you don’t have self-rising flour, you can prepare it by combining of 1 cup of all-purpose flour and 1.5 teaspoons baking powder and ¼ teaspoon fine salt.
