Frozen Peach Bellini
While I may not be personally imbibing in any Peach Bellinis right now, frozen or otherwise (🤰), with the weather warming up and my craving for icy beverages through the roof, I thought it might be a good time to reshare this old recipe from the archives. I’ve been making it every summer for years and it’s always a refreshing hit at parties. If you haven’t tried it yet, here’s your sign!
Why You’ll Love This Recipe
Not your average Peach Bellini. Don’t get me wrong, the basic is wonderful, but my version gives you extra refreshing, icy, slushy results. Only 4 ingredients! It really couldn’t be lower maintenance, yet produces flavorful results every time. Quick and easy: simply add all ingredients to a blender, and blend! That’s my kind of drink! Can be made in advance! While this drink wasn’t designed for making in advance (it’s no sweet tea or lemonade), I share some fun tips for making a frozen slushy version in advance.
What You Need
You’ll only need four ingredients for this recipe. Don’t you just love it when things are simple?
Peaches. Use frozen peaches, as that’s where the frostiness for this drink comes from. Prosecco. Prosecco is a fruity sparkling wine that pairs perfectly l with the peach flavors in this drink. Moscato d’Asti or champagne could also be used in a pinch. Or, if you’d like to make a non-alcoholic version of this drink, you can substitute the Prosecco with ginger ale, sprite, or sparkling grape juice. Peach schnapps. This is not necessarily a traditional ingredient, but I love the flavor that it adds, as well as the extra bite! You could just leave it out for a less boozy beverage. Sugar. Just a little bit helps bring out the sweetness of the peaches and actually helps their natural flavor shine.
SAM’S TIP: Some people like to add raspberries or strawberries to their Bellini. I personally like to save mine for garnish, but you can always toss them in the blender too (it makes a pretty rosy-sunset color!). This is just an overview of the ingredients I used and why.
