Yesterday I shared Oreo Apple Milkshake under the chocolate theme and also mentioned vaandu’s chocolate preferences. White chocolates were his favorites up until last year. Last Christmas, I received a hot chocolate mix with peppermint as a gift at work and prepared it one fine day. Never in my wildest dreams did I imagine that this little guy would love this hot chocolate with peppermint flavor. And that marked the beginning of our chocolate journey. :-) I know we have a long way to go.
Eggless Nutella Cookies
I wanted to introduce the chocolate flavor slowly along with his favorite flavors. Hence I combined oreo cookies with vanilla ice-cream and now Nutella with white chocolate chips. :-) White chocolate chips are not mandatory for these cookies, and you can just make these cookies with three ingredients – flour, Nutella, and yogurt. Also, you can prepare these cookies within 15 minutes, and that includes baking time too. :-) Nutella is the hazelnut cocoa spread, and I know its very versatile. I tried the sandwich first, but kiddo didn’t like it that much whereas he loved these cookies, even if I say so myself. :-) I baked three batches of these Nutella cookies during his birthday week in January. That’s when I decided to note it down on my blog too.
Here is the quick one-minute video of this cookie preparation and this is my first video of 2018. With a 4-month-old pup, cooking, and clicking, by itself, became very difficult and I didn’t even think about videos. Last weekend, somehow things worked out. Vaandu and I were able to shoot it quickly. Without any further ado, here is the video and the detailed recipe with instructions below.
Eggless Nutella Cookies Recipe
Soft and chewy eggless Nutella cookies with yogurt as the egg substitute and with white chocolate chips(optional). A delicious bake under 15 minutes.
Ingredients:
All-purpose flour – ½ cup Nutella – ⅓ cup Yogurt – ¼ cup White chocolate chips – 2 tbsps (optional)
Steps:
Preheat the oven to 350 deg F. Line a baking tray with aluminum foil or parchment paper and set aside. In a mixing bowl, combine the APF, Nutella, and yogurt. Mix until well combined. If using, gently fold in the white chocolate chips. Scoop out 1 to 1.5 tbsp of the cookie dough and place them on the lined baking tray. Flatten them slightly using the back of the cookie scoop. Bake this for 10 minutes. After 10 minutes, allow it to cool for 30 to 40 minutes.
Soft, chewy and yummy Nutella cookies are ready. You can store them in an airtight container.
Notes:
I used homemade yogurt for this recipe. You can use low fat or 2% Greek yogurt variety as well. My cookie scoop measures 1.5 tbsp and this measure yields about 9 to 10 cookies. Instead of cookie scooper, you can roll 1 to 1.5 tbsp of dough using your hands into balls and flatten them too. Make sure you grease your palm lightly with coconut oil or butter. You can replace white chocolate chips with nuts, dry fruits of your choice or entirely skip it too.
