Most Indians consider eggs as not vegetarian and many refrain from eating them. My mom is one of them. So I made this no egg French toast for her one day. She absolutely loved it. It has become a family favorite ever since. This is also perfect for anyone with egg allergy. The best part of this eggless French toast recipe is it takes just a few minutes to put together. So it is perfect for busy mornings when all you have on hand is milk and bread. The other main ingredient you need is custard powder or cornstarch. Cornstarch acts as a egg replacer and makes this egg free French toast taste almost similar to the original. Custard powder is essentially flavored cornstarch and is widely used in Indian desserts. It is a perfect ingredient to use in this recipe.

Bread - use any good quality sandwich bread. I like either white whole grain bread or honey whole wheat bread. But feel free to use your favorite. Gluten free bread would also work.Milk - any dairy or non-dairy milk will work. I recommend using either 2% or whole milk for the best taste. If using non-dairy, almond or oat milk are my favorite because they are creamier than other plant based milks.
Custard powder - I use brown and polson brand custard powder. But Bird’s is also a great brand that is widely available in the US. If you do not have custard powder on hand, then use equal amount of cornstarch.Granulated Sugar - to lightly sweeten the custard.Vanilla extract - this is optional, but adds lot of flavor to the French toast.

Start by making the egg free custard first. In a shallow wide plate or a pie pan; combine milk, custard powder, sugar and vanilla extract. Whisk until the sugar has dissolved and there are no lumps in the mixture. Heat a nonstick griddle/ tawa over medium heat. Dip a bread slice in the milk mixture making sure that the whole bread gets a good coating of the custard mixture. Flip and coat the second side as well. Do not leave the bread in the milk for too long, that might cause the bread to get too soggy. Melt 1 tablespoon butter on the griddle and place the custard soaked bread in the pan. Cook for 2~3 minutes on each side until golden brown. Remove onto a plate and repeat the remaining bread. Serve hot with a drizzle of maple syrup and fresh fruit.
