What is Diet Cabbage Soup?

This is one of the most requested soups at our place whether anyone has fallen sick or needs to eat light or is on a diet. I’ve used it several times following the ‘7 day Diet’ or low fat/carb diet or a weight loss diet. Unlike many diet food, this one actually tastes really good! Made using green cabbage, carrots, broccoli, turmeric, cinnamon, and vegetable stock, it’s super easy to digest and tastes good too. The addition of turmeric and cinnamon along with black pepper, not only makes it great for detox, especially after all the Holiday feasting but healing holistic too. Also, during winter days, I usually make a big batch and store it in the fridge for 2-3 days to add as a side to sandwiches or light pasta dishes.

Diet Cabbage Soup Ingredients:

As mentioned, the recipe is extremely simple and made using minimal ingredients. If need be, you can skip the spices too or use what is available in your kitchen: Green Cabbage Broccoli – I’m using fresh broccoli but frozen can be used too without thawing Carrot – I’m using fresh broccoli but frozen can be used too without thawing Fresh Ginger – this adds a refreshing flavor and helps in detox too. Fresh Lemon Juice – this adds a refreshing flavor and helps in detox too. Fresh Cilantro  White Vinegar Olive Oil Vegetable Stock – I’m using a low-sodium vegan vegetable stock, but you can add any stock of choice or use plain water too. Spices: turmeric powder, ginger powder, black pepper powder, bay leaf, cloves, cinnamon and salt

How to Make the Soup:

This is going to be the easiest soup you will ever make. We start by adding spices to a hot pan with olive oil. Then add veggies and saute. Then add turmeric, salt and ginger. Saute everything. Then add the stock or water, whatever you are using. Then saute cook for 5-7 minutes. Then add white vinegar, lemon juice, fresh cilantro and cook everything for 5 more minutes. Check for seasoning (adjust if need be) and turn off the heat. Transfer the soup to serving bowls. Add chopped fresh cilantro on top and squeeze some more lemon juice. Serve hot or store in an air-tight container (once cooled) and keep in the fridge for 2-3 days.

Serving Suggestions & Alternatives:

This soup is very mild and simple, hence it can be paired with a lot of recipes and cuisines.  I love to pair it with ‘brown bread sandwiches’ or even ‘hummus and veggies’. You can add a cup of steamed brown rice to make it slightly more filling. Now, here are few details regarding these ingredients: Cabbage: I’m using medium green cabbage.
