I love oats and can have them for breakfast, lunch or dinner. I use them in quite a few different recipes like this quinoa oats idli, oats khichdi and this tomato dosa with oats. Today’s chia and oat porridge is a hearty Danish breakfast. It is so popular that there is a very popular restaurant with the name Grød in Copenhagen. Grød means porridge in Danish and it can be either savory or sweet. In this version of Danish grod, chia seeds are used along with rolled oats. Chia adds both texture and nutrition to this dish. The best part of this recipe is that it is quick and easy to make, just 10~15 mins total. Also this is oatmeal porridge is creamy and perfect breakfast to start any day. The cardamom flavored berries are a great addition to this yummy vegan porridge. This Danish porridge recipe is adapted from Whole Bowls cookbook by Allison Day. It is one of my go-to breakfast porridge that sticks to your ribs and is absolutely delicious.

Rolled Oats. Quick cooking oats will not work because they won’t hold their shape and will become too mushy. Non-dairy milk - I use unsweetened almond milk. Any non-dairy or dairy milk will work in this recipe.Chia seeds - this superfood is a great addition to your daily diet. They help to thicken the porridge*.

Instructions

Here is how to make easy Danish grod recipe: In a medium size saucepan, combine oats, non-dairy milk and salt. Bring to a boil, lower the heat to medium-low and cook stirring constantly, about 3~5 minutes. Stir in the chia seeds and cook stirring for another 3~5 minutes, or until the mixture thickens. In a small saucepan, combine berries, maple syrup and ground cardamom. Cover and cook till the berries are warmed through and turn soft, about 3~5 minutes. To serve, divide the oats porridge equally between the two bowls, top with the berries and Enjoy!!
Expert Tips
Quick cooking steel cut oats are also great to make Danish porridge.Ground flaxseeds are good substitute for chia seeds, but the texture and taste will not be the same.If you are not vegan, then use regular milk. Any of your favorite unsweetened non-dairy milk will work. I love almond or oat milk in my grød recipe. Customize your Danish oatmeal bowls with your favorite toppings. I love adding peanut butter or almond butter and chopped nuts.
