Eggs: Rarely a day goes by when I don’t eat a couple of eggs. This wrap features two perfectly scrambled eggs. Bacon: A few slices of crisp bacon provides plenty of flavor and texture. Have you ever tried air fryer bacon? It’s perfect for small batches to use in recipes like this wrap. Fresh tomatoes: Choose the best tomatoes you can find. It doesn’t really matter what kind they are. Avocado: Silky, smooth, decadent avocado makes this a “California” wrap since avocados grow in abundance there, or so I’ve heard. I’d love to be able to grow my own avocados in the backyard! Greens: Another thing we go through like crazy in my family is pre-washed, ready-to-eat baby greens, like mesclun, spinach, kale, etc. Cream cheese: Spreadable cream cheese (sold in small plastic tubs) is the glue that holds everything together in this wrap. Choose your favorite kind. We like chive and onion, or garlic and herb.

How To Make A Breakfast Wrap

Prep the ingredients. Fry the bacon, scramble the eggs, slice the avocado. Assemble the breakfast wrap. All of these tasty ingredients are wrapped up in a deliciously soft wrap (such as FlatOut) or large soft tortilla. Spread a couple tablespoons of cream cheese on the wrap, add the bacon, warm scrambled eggs, sliced avocado, and tomatoes. Roll it up! Carefully roll up your breakfast wrap and tie it together with a cute blue string. The string is optional, but adorable.

Variations You Could Make

None are necessary but this is a super flexible breakfast wrap recipe. Bake a whole package of bacon. It’s easy (no flipping or frying) with minimal clean-up. It will keep in the fridge for up to a week or in the freezer for a month. Learn how to bake bacon today! It’s a game changer.

If you want to use turkey bacon, go for it! Or make it vegetarian, if you like. If you want to use spinach instead of mixed greens, do it! If you don’t have avocado, shed a few tears, but make this anyways. It will still be great! If scrambled eggs aren’t your jam, give it a go with a couple fried eggs or sliced boiled eggs. Sheet pan eggs work particularly well for this wrap.
