I love cookie cutters. They come in handy for many recipes and one such recipe is the paratha. As I mentioned in my Ghee rice post, kiddo loves easy to grab and mess free food for lunch. So here is what I did with my paratha to make into finger food. Roll the paratha and using cookie cutter carve them out to your favorite shapes. Hold on, I can hear you asking how can I do all this in the morning? Here is what I do,
Prepare the dough overnight and keep it refrigerated. In the morning I add about 3 to 4 tbsps of wheat flour and knead the dough again for 5 minutes and roll them out. I carve the shapes only for kiddo and for us I just roll them out regularly.
Or
Just grate the broccoli and refrigerate. (That’s what takes time) Knead the dough and follow the steps as given below.
How I pack, I usually don’t spread ghee or butter over the parathas when packing for lunch. Once you take out the paratha from the tava, let it cool down for a bit and wrap it a aluminum foil. Before getting into the recipe, here are my other broccoli recipes and paratha recipes.
Broccoli Masoor Dal Tadka Baked Broccoli Broccoli Cheddar Cheese Soup Brussel Sprouts Paratha Dal Paratha
Ingredients:
Grated Broccoli – 1.5 cups Wheat Flour – 2 cups Corn Flour – ½ cup Sambar powder – 1 tbsp Sugar – 1 tsp Salt – 1.5 tsp Water – ¼ cup (adjust accordingly) Oil – 1 tsp + as required for cooking the paratha
Prep – Work:
Wash the broccoli, pat it dry and grate them ignoring the stems.
Steps:
Add the wheat flour, corn flour, sambar powder, salt and sugar to the grated broccoli and mix well.
Broccoli combined with salt will ooze out water. So add water little by little and knead the dough. The dough should be thick and should not be watery.
Divide the dough into 10-12 balls and roll them. If required dust with additional flour. Carving out shapes: Once you roll the paratha, using your favorite cookie cutter, carve the desired shapes. From one ball of dough, I carved out 3 shapes.
Now heat the tava and place these rolled/carved parathas and spread little oil. (I placed unto 4 carved out paratha in the tava)
Let it cook for a minute and flip. Let it cook for another minute on the other side. If required add oil. Once both sides are cooked, thats it. Yummy parathas are ready.
Serve hot with ketchup or yogurt or pickle.
Notes:
Additional of corn flour is completely optional. Instead of sambar powder, you can add coriander powder and red chilly powder or the store bought paratha masala. Adjust salt and sugar(optional) according to your preference. Instead of broccoli, grated paneer or cauliflower can be added.
