What is Bread Omelette?

Bread omelet is a popular street food in India. It is sold on roadside stalls that are especially crowded during the morning hours to enjoy this satisfying breakfast. This is a delicious fusion of savory Indian flavors into French toast. My husband has been making this egg bread sandwich recipe for years. I first posted this recipe in 2006. But with the latest viral Indian bread omelette egg sandwich on Tiktok, I thought it is time to update my old post. Bread and eggs are quite common breakfast items around the world. But in this Indian roadside bread omelette recipe, bread is dipped in a spicy egg mixture - similar to that in a French toast. It is then cooked until golden and a savory onion-tomato mixture is added as filling. The best part about this egg omelet sandwich recipe is the fillings. They make this a stuffed bread omelette. You can get creative and add anything you like. Add cheese, sautéed or roasted veggies or even hash browns. Try this amazing omelette sandwich hack and see why everyone is raving about it.

Bread - I love using whole-wheat or multi-grain bread. But feel free to use your favorite.Eggs - I always have large eggs at home and I use 2 eggs per person in this recipe.Veggies - I use simple sautéed onions and tomatoes as the filling. But you can also add other veggies like spinach, broccoli, mushrooms etc. Check the Tips section for more filling ideas.Seasonings - salt, pepper and green chilies

Instructions

I like to make individual servings of this bread omelet because it tastes the best when served hot. First make the filling for the Indian omelette sandwich and set it aside. When ready to serve, start making the egg toast sandwich. Heat oil in a small pan on medium heat, add the chopped onion and cook till they turn translucent. Add the tomato, salt and pepper. Cook till tomato is slightly soft. Turn off the heat and set aside. In a small bowl, break eggs, add green chilies (if using), salt and pepper. Whisk well to combine. Set aside. Heat a medium size nonstick pan on medium heat. Add 1 tablespoon butter and once it melts, add the egg mixture. Swirl around to evenly distribute the mixture in the pan. Place a bread slice in the still wet egg mixture to briefly soak it. Then quickly flip it. Repeat the dipping process with another bread slice. Cook until the eggs are set. Carefully flip both the bread slices, making sure that the omelet does not break. Once filpped, the omelette is on top of the bread. Place half of the onion-tomato mixture on one of the bread slices. Press the omelet over the filling and fold the bread slices over each other. Cook until both the bread slices are nicely golden on the outside. Remove from the pan and slice in half and serve right away. Repeat with the remaining ingredients.

Tips

I like whole-wheat or multigrain bread in this recipe, but feel free to your favorite bread.
