Beetroot Greens Fritters 

Also known as ‘Chukandar ke Patte ke Pakore’ in India, is a deep-fried fritters that’s perfect for winter evenings with a hot cup of masala chai or coffee. Go to any part of India and you’d find pakora’s/fritters of different varieties like onion, greens, potato, chili, etc as a favorite snack any time of the day. So, just like most families, I grew up eating tons of varieties of them, but my most favorite during winters are these beet green fritters. The tender, fresh beetroot leaves mixed with chickpea flour, makes an extremely delicious combination along with minimal spices. Also, since beet greens have some parts of pink roots in them, the color of the fritters is gorgeous too, especially if you want to serve them in high tea/parties.

Beet Greens Fritters Ingredients:

The best part about this recipe is that it uses very simple/regular ingredients but the taste is mind-blowing. Here’s what you need for them:

Beetroot Greens or Beet Greens – roughly chopped Spinach – optional as I didn’t have much greens – roughly chopped Onion – optional – adds a slight sweet taste to it Chickpea Flour  Spices: turmeric powder, red chili powder, salt Carrom Seeds Water  Oil – for frying

How to Make Chukandar Patte Pakore:

As simple the ingredients are, making these pakoras are even simpler: Start by taking a big bowl. Add chopped greens, onion, chickpea flour, spices and carrom seeds. Mix everything evenly and add 3-4 tbsp water. You just want the water to bind the greens and not make a loose paste. Heat oil in a large pot/kadhai Using a large spoon, scoop the greens and lightly (carefully) add in the hot oil. Follow the above process to add 6-7 scoops of greens in pot (or as many as you accommodate leaving some space to turn them properly). Fry in mid-heat/flames and turn the fritters from side to side to cook evenly on both sides. After 2-3 minutes, the pakora will be evenly cooked and crispy. Remove all the pakora’s to a plate using a large slotted spoon or kalchi. Similarly, fry all the pakoras and keep them aside. Turn off the heat. Transfer the pakora to a serving bowl and enjoy hot.
