How to Make Air Fryer Roasted Eggplant:

We take a bowl and mix olive oil, chili flakes, garlic powder, salt, and zaatar. Mix everything and keep it aside.

Then we slice the washed and patted dried eggplant into 1/2 inch thick long slices. And generously spread the ‘zaatar oil spread’ on each slice (face up).

Then place the eggplant slices in a preheated air fryer basket and air fry for 12-15 minutes or until they are golden brown and crispy.

Remove from the air fryer and let them rest for a few minutes.

Now, decorate with feta cheese, pomegranate seeds, fresh mint leaves, zaatar, and a drizzle of honey on top. Transfer to a platter and serve fresh.
